  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 1 cup white chocolate chips
  • 2 cups fresh raspberries
  • 16 oz cream cheese, softened
  • ½ cup sour cream
  • ¾ cup granulated sugar
  • 2 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking dish with parchment paper.
  2. In a bowl, mix graham cracker crumbs and melted butter until combined. Press into the bottom of the prepared dish to form the crust.
  3. Melt white chocolate chips in a heatproof bowl over simmering water or in the microwave until smooth.
  4. Beat softened cream cheese until fluffy; mix in sugar and vanilla extract. Fold in sour cream and half of the melted white chocolate until smooth.
  5. Pour half of the filling over the crust, layer with raspberries, drizzle with remaining white chocolate, and top with the rest of the filling.
  6. Bake for 30-35 minutes until set around edges but slightly jiggly in center. Cool before refrigerating for at least two hours.
