Ingredients

  • 1 cup fresh strawberries, chopped
  • 1 cup rolled oats
  • 1/2 cup nut butter (peanut or almond)
  • 1/4 cup honey or maple syrup
  • 2 tbsp chia seeds
  • 1 tsp vanilla extract
  • 1/4 cup pepitas (pumpkin seeds)

Instructions

  1. Wash and chop strawberries into small pieces.
  2. In a mixing bowl, combine oats, nut butter, honey or maple syrup, chopped strawberries, chia seeds, and vanilla extract. Mix until well combined.
  3. Cover and chill the mixture in the refrigerator for about 30 minutes.
  4. Roll tablespoon-sized portions into balls.
  5. Optionally roll some bites in pepitas for added crunch.
  6. Serve immediately or store in an airtight container in the fridge.
