  • 1 ¾ cups confectioners' sugar (210g)
  • 3 large egg whites (90g)
  • ¼ tsp cream of tartar
  • ½ cup granulated sugar (100g)
  • 2 tsp red gel food coloring
  • ½ cup unsalted butter, softened (113g)
  • 1 cup powdered sugar for filling (120g)

Instructions

  1. Preheat your oven to 300°F (150°C). Line two baking sheets with parchment paper.
  2. In a bowl, sift together the almond flour and confectioners' sugar.
  3. In a separate bowl, whip the egg whites until foamy. Add cream of tartar and gradually add granulated sugar until stiff peaks form. Gently fold in red food coloring.
  4. Carefully fold the dry ingredients into the whipped egg whites until you reach a 'lava' consistency.
  5. Pipe small circles onto prepared baking sheets, ensuring space between each.
