  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 cups all-purpose flour
  • 1 tsp vanilla extract
  • 1 tsp baking powder

  • 1/2 cup jam or preserves (strawberry, raspberry, or apricot)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 3 minutes).
  3. Mix in the vanilla extract. Gradually add the flour combined with baking powder and salt until just incorporated.
  4. Roll dough into 1-inch balls and place them two inches apart on the prepared baking sheet.
  5. Use your thumb to create an indentation in each ball and fill with about half a teaspoon of jam.
  6. Bake for 12-15 minutes until golden around the edges but still soft in the center. Cool on wire racks before serving.
