  • 2 tablespoons sriracha sauce (for serving)
  • 1 tablespoon olive oil (for cooking)

Instructions

  1. Prepare all ingredients by thawing frozen scallion pancakes and prepping fillings.
  2. Heat olive oil in a skillet over medium heat. Add cooked chicken or tofu and warm for 5-7 minutes; set aside.
  3. On one scallion pancake, layer mozzarella cheese, chicken or tofu, and cilantro. Top with another pancake, pressing gently.
  4. In the same skillet, add more oil if needed and cook the quesadilla for 3-4 minutes on each side until golden brown.
  5. Transfer to a cutting board, let cool for a minute, slice into wedges, drizzle with sriracha sauce, and serve.
