  • 1 cup long-grain jasmine rice
  • 1 cup plain Greek yogurt
  • 1 medium cucumber, grated and squeezed dry
  • 2 tbsp fresh dill, chopped
  • 2 tbsp lemon juice
  • 3 garlic cloves, minced
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
  2. Season the chicken breasts with salt and pepper, then place them in the prepared baking dish.
  3. Cook the rice according to package instructions; fluff when done.
  4. In a bowl, mix Greek yogurt, grated cucumber, garlic, dill, lemon juice, salt, and pepper until smooth.
  5. Spread the cooked rice over the chicken and top with tzatziki sauce.
  6. Cover with foil and bake for 30 minutes; remove foil and bake for an additional 10 minutes until golden.
