  • 4 large russet potatoes
  • 1/2 cup unsalted butter (softened)
  • 1 cup shredded cheddar cheese
  • 1/4 cup milk
  • 1/2 cup cooked bacon bits
  • 1/4 cup chopped green onions

Instructions

  1. Preheat your oven to 400°F (200°C). Wash and dry the russet potatoes.
  2. Bake the potatoes for 45-60 minutes until tender. Let cool slightly.
  3. Cut each potato in half lengthwise and scoop out the flesh into a bowl, keeping the skins intact.
  4. Mash the potato flesh with butter, 3/4 cup of cheese, milk, bacon bits, and green onions until smooth.
  5. Spoon the filling back into the potato skins, top with remaining cheese.
  6. Bake again for 15-20 minutes until heated through and golden.
