Instructions

  1. Prepare the crepes by whisking together 1 cup flour, 2 eggs, and 1 ½ cups milk until smooth. Cook in a nonstick skillet over medium heat until golden brown on both sides.
  2. In a bowl, combine 1 cup mascarpone cheese, ½ cup sugar, and cooled espresso. Whip until creamy.
  3. Layer one crepe on a serving platter and spread with the mascarpone mixture. Repeat layers until all crepes are used, finishing with the filling on top.
  4. Cover with plastic wrap and chill in the refrigerator for at least four hours or overnight.
