  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 16 oz full-fat cream cheese, softened
  • ¾ cup granulated sugar
  • 1 cup heavy cream, chilled
  • ½ cup brewed espresso or strong coffee
  • 2 tbsp unsweetened cocoa powder

Instructions

  1. Preheat oven to 325°F (160°C) and grease a springform pan.
  2. Mix graham cracker crumbs and melted butter; press into the bottom of the pan to form the crust.
  3. Beat softened cream cheese and sugar until smooth; gradually add whipped heavy cream.
  4. Stir in brewed coffee until well combined.
  5. Pour filling over the crust; bake for 50-60 minutes until slightly jiggly in the center.
  6. Turn off oven and let cool inside for an hour; refrigerate for at least 4 hours or overnight.
  7. Before serving, dust with cocoa powder.
