  • 1 cup unsweetened cocoa powder
  • 1 ½ cups granulated sugar
  • 1 cup all-purpose flour
  • ½ cup unsalted butter (melted)
  • 3 large eggs
  • 1 tsp instant coffee granules
  • 8 oz mascarpone cheese
  • 2 tbsp coffee liqueur (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking pan.
  2. In a mixing bowl, whisk together cocoa powder, flour, sugar, and instant coffee granules until combined.
  3. Melt butter and let it cool slightly before adding to the dry ingredients along with eggs. Mix until just combined.
  4. Pour the batter into the prepared pan and bake for 25-30 minutes until a toothpick comes out with moist crumbs. Let cool.
  5. For the topping, mix mascarpone cheese with coffee liqueur until smooth and spread it over the cooled brownies.
  6. Cut into squares and enjoy!
