  • 2 medium zucchinis
  • 1 cup whole milk ricotta cheese
  • 1 cup shredded fresh mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 large egg
  • ¼ cup chopped fresh basil
  • 1 cup marinara sauce
  • 2 tsp olive oil
  • Salt and pepper to taste

Instructions

  1. 1. Preheat the oven to 400°F (200°C). Slice zucchinis lengthwise into thin strips (about 1/8 inch thick) and sprinkle with salt. Let sit for 15 minutes to drain excess moisture.
  2. 2. In a bowl, mix ricotta, mozzarella, Parmesan, basil, egg, salt, and pepper until well combined.
  3. 3. Pat zucchini strips dry and spread a tablespoon of the cheese mixture at one end of each strip. Roll up tightly and place seam-side down in a baking dish.
