  • 1 whole turkey (1214 lbs)
  • 2 tbsp olive oil
  • 2 tsp salt
  • 1 tsp black pepper
  • Juice of 1 lemon
  • 2 tsp fresh rosemary, chopped
  • 2 tsp fresh thyme, chopped
  • 2 tsp fresh sage, chopped

Instructions

  1. Preheat oven to 450°F (232°C). Place the turkey breast-side down on a cutting board. Using kitchen shears, cut along both sides of the backbone and remove it. Flip the turkey over and press down firmly on the breastbone to flatten.
  2. Drizzle olive oil over the turkey and rub it in. Season generously with salt and pepper. Squeeze lemon juice over the bird and tuck in lemon halves.
  3. Mix chopped herbs together and rub them all over the turkey for added flavor.
  4. Place the turkey on a lined baking sheet and roast for about 1 hour and 15 minutes or until an internal thermometer reads 165°F (74°C).
  5. Rest for 20-30 minutes before carving and serving.
