Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 1 tbsp baking powder
  • 4 large eggs
  • 1 cup whole milk
  • ½ cup unsalted butter (softened)
  • 1 cup pumpkin puree (canned or homemade)
  • 1 cup pecan pieces (lightly toasted)
  • 1 tsp cinnamon
  • ½ tsp nutmeg

Instructions

  1. Preheat oven to 350°F (175°C). Grease three round cake pans.
  2. In a mixing bowl, cream together softened butter and sugar until light and fluffy. Add eggs one at a time, mixing well after each addition. Gradually incorporate milk until smooth.
  3. In another bowl, whisk together flour, baking powder, cinnamon, and nutmeg. Slowly add this mixture to your wet ingredients until just combined.
  4. Divide half of the batter evenly between two greased pans. Spread pumpkin puree on one layer and pecan filling on another before covering with remaining batter.
  5. Bake for 25-30 minutes or until golden brown and a toothpick inserted comes out clean. Let cool in pans.
  6. Once cooled, stack layers alternating between pumpkin pie filling and pecan filling—frost with your choice of buttercream or whipped cream.
