  • 1/4 cup unsalted butter, melted

  • 1/2 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1/4 cup unsalted butter, melted
  • 1/2 tsp cinnamon
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 350°F (175°C) and prepare a baking dish with nonstick spray.
  2. Peel and chop sweet potatoes into chunks. Boil in salted water until tender, about 15-20 minutes. Drain and cool slightly.
  3. Mash sweet potatoes in a bowl. Mix in melted butter, brown sugar, cinnamon, vanilla extract, and a pinch of salt until smooth.
  4. In another bowl, combine chopped pecans, flour, remaining brown sugar, and additional cinnamon. Stir in melted butter to create a crumbly topping.
  5. Spread mashed sweet potato mixture into the baking dish and sprinkle the pecan topping evenly over it.
  6. Bake for 25-30 minutes until bubbling and golden on top.
