  • 1 lb lean ground beef
  • 1 cup breadcrumbs
  • 2 large eggs
  • 1 small onion, finely chopped
  • 1/2 cup ketchup
  • 1 sheet puff pastry, thawed
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 2 tbsp mustard

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, mix together ground beef, breadcrumbs, chopped onion, eggs, ketchup, olive oil, salt, and pepper until well combined.
  3. Shape the mixture into a loaf on the prepared baking sheet, making it slightly wider at one end.
  4. Roll out puff pastry on a floured surface, cut into strips about 1 inch wide, and wrap around the meatloaf like bandages.
  5. Bake for 45-50 minutes until cooked through (internal temperature should reach at least 160°F/70°C).
  6. Let cool slightly before adding mustard or ketchup dollops as eyes.
