  • 4 boneless, skinless chicken breasts
  • 2 cups fresh spinach
  • 8 oz cream cheese (full-fat)
  • 1/2 cup freshly grated Parmesan cheese
  • 3 cloves garlic (minced)
  • 2 tbsp olive oil (plus more for drizzling)
  • 2 tbsp low-sodium soy sauce
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and spray a baking dish with nonstick spray. Season the chicken breasts generously with salt and pepper.
  2. In a skillet, heat olive oil over medium heat. Add minced garlic and fresh spinach; sauté until wilted, about 2 minutes. Remove from heat and mix in cream cheese and Parmesan until well combined.
  3. Carefully cut pockets into each chicken breast without slicing through. Generously stuff each pocket with the spinach mixture.
  4. Place the stuffed chicken in the prepared baking dish, drizzle with olive oil, and sprinkle any remaining Parmesan on top. Bake for 25-30 minutes or until the internal temperature reaches 165°F (75°C).
  5. While baking, whisk together soy sauce and honey or brown sugar in a small bowl.
  6. Once cooked, let the chicken rest for five minutes before slicing. Serve drizzled with sauce.
