Ingredients

Scale
  • 2 cups fresh spinach (roughly chopped)
  • 4 large eggs (separated)
  • 1/2 cup milk
  • 1/4 cup unsalted butter (melted)
  • 1 cup Gruyère cheese (grated)
  • 2 tablespoons all-purpose flour
  • Salt to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Grease an oven-safe baking dish with butter.
  2. Sauté the spinach in a skillet over medium heat until wilted (about 3 minutes). Set aside.
  3. In a bowl, whisk egg yolks until creamy. Add milk, melted butter, flour, and salt; mix well. Stir in sautéed spinach and cheese.
  4. In another bowl, beat egg whites until soft peaks form. Gently fold them into the spinach mixture without deflating the eggs.
  5. Pour the mixture into the prepared baking dish and bake for 25-30 minutes until puffed and golden brown.
  6. Let cool for 5 minutes before serving warm.
