  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cups fresh spinach (approximately 60g)
  • 1/2 cup dried cranberries (about 80g)
  • 4 oz cream cheese, softened
  • 1 tsp garlic powder
  • 1 cup shredded mozzarella cheese (about 4 oz)
  • Salt and pepper to taste
  • 2 tbsp balsamic vinegar
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a baking dish.
  2. Sauté spinach in a skillet over medium heat until wilted (about 2 minutes). Remove from heat and mix in cream cheese, cranberries, garlic powder, and mozzarella until well combined.
  3. Cut pockets into each chicken breast; season with salt and pepper inside and out.
  4. Stuff each chicken breast with the spinach mixture and secure with toothpicks if necessary.
  5. Place stuffed chicken in the baking dish and bake for 25-30 minutes or until internal temperature reaches 165°F (75°C).
  6. Whisk together balsamic vinegar and olive oil for an optional drizzle on top before serving.
