  • 9 lasagna noodles
  • 1 cup pumpkin puree
  • 1 cup ricotta cheese
  • 2 cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • ¼ tsp ground nutmeg
  • ½ tsp ground cinnamon
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a baking dish.
  2. In a bowl, mix together pumpkin puree, ricotta cheese, garlic, nutmeg, cinnamon, salt, and pepper until smooth.
  3. Spread a thin layer of the mixture in the baking dish and layer with lasagna noodles. Repeat with remaining pumpkin mixture and sprinkle mozzarella and Parmesan between layers.
  4. Top with noodles and cover with aluminum foil. Bake for 30 minutes; remove foil and bake an additional 15 minutes until bubbly and golden.
  5. Let cool slightly before slicing into squares and serve hot.
