  • 1 tsp ground coriander
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Add diced onion and sauté until translucent (about 5 minutes). Stir in minced garlic and cook for another minute.
  2. Preheat oven to 400°F (200°C). Toss chopped parsnips with olive oil, salt, and pepper, then roast for about 20 minutes until golden.
