  • 3 medium carrots, diced
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup full-fat coconut milk
  • 2 tsp olive oil
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • ½ tsp ground turmeric
  • Salt and pepper to taste

Instructions

  1. Rinse lentils under cold water. Chop onions and carrots; mince garlic.
  2. In a large pot over medium heat, add olive oil and sauté onions until translucent (about 5 minutes). Add minced garlic and sauté for an additional minute.
  3. Stir in diced carrots along with cumin, coriander, turmeric, salt, and pepper; cook until fragrant.
  4. Add rinsed lentils and vegetable broth; bring to a boil then reduce heat to simmer for about 25 minutes until lentils are tender.
  5. Blend the soup until smooth using an immersion blender or regular blender (exercise caution with hot liquids).
  6. Stir in coconut milk for creaminess. Adjust seasoning before serving.
