  • 8 egg roll wrappers
  • 1 cup shredded chicken (cooked)
  • 1 can (15 oz) black beans (rinsed and drained)
  • 1 cup fresh corn (frozen or canned)
  • 1 cup shredded cheddar cheese
  • ½ cup salsa
  • Cooking spray
  • ½ cup ranch dressing
  • 2 tbsp salsa

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, combine the shredded chicken, black beans, corn, cheddar cheese, and salsa until well mixed.
  3. Place two tablespoons of the filling onto each egg roll wrapper. Fold over one corner to cover the filling tightly, then fold in the sides and roll up like a burrito.
  4. Arrange the egg rolls seam-side down on the prepared baking sheet. Lightly spray with cooking spray and bake for 20-25 minutes until golden brown.
  5. While baking, mix ranch dressing and salsa in a small bowl for dipping.
  6. Serve warm with your preferred dipping sauce.
