  • 4 boneless, skinless chicken breasts
  • 4 cloves fresh garlic, minced
  • 1 medium onion, diced
  • 28 oz canned crushed tomatoes
  • 2 tsp Italian seasoning
  • 1 cup red wine
  • 2 tbsp low-sodium soy sauce
  • 12 oz pasta (spaghetti or penne)

Instructions

  1. Dice the onion and mince the garlic.
  2. Sauté onions and garlic in a skillet over medium heat until fragrant (about 5 minutes).
  3. Place chicken at the bottom of the slow cooker. Add crushed tomatoes, sautéed onions and garlic, Italian seasoning, and red wine.
  4. Stir in low-sodium soy sauce gently.
  5. Cover and cook on low for 6 hours or high for 3 hours.
  6. About 30 minutes before serving, cook pasta according to package instructions; drain well.
  7. Combine cooked pasta with the Bolognese sauce and serve.
