  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 24 oz (3 packages) Philadelphia cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs, room temperature
  • 2 tsp pure vanilla extract
  • 1 cup semi-sweet chocolate chips
  • ¾ cup salted caramel sauce (store-bought or homemade)

Instructions

  1. Preheat your oven to 325°F (160°C). Grease a springform pan with nonstick spray.
  2. In a bowl, combine graham cracker crumbs and melted butter until mixed well. Press firmly into the bottom of the prepared springform pan.
  3. In a large mixing bowl, beat softened cream cheese with sugar until smooth. Add eggs one at a time, mixing well after each addition. Stir in vanilla extract and gently fold in chocolate chips.
  4. Pour the filling over the crust evenly and tap on the counter to eliminate air bubbles. Bake for about 55-60 minutes until set but slightly jiggly in the center.
  5. Remove from the oven and let cool at room temperature before refrigerating for at least four hours or overnight.
  6. Drizzle generously with salted caramel sauce before serving.
