  • ⅓ cup unsalted butter, melted
  • ½ cup granulated sugar (divided)
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • 3 large eggs, room temperature
  • 1 tsp pure vanilla extract
  • 1 cup granulated sugar for the salted caramel sauce
  • ½ cup heavy cream
  • 1 tsp sea salt

Instructions

  1. Preheat oven to 350°F (175°C). Combine graham cracker crumbs, melted butter, and ¼ cup sugar in a bowl. Press into the bottom of a springform pan.
  2. In another bowl, beat cream cheese until smooth. Gradually add remaining sugar, then mix in sour cream and vanilla extract. Add eggs one at a time, mixing gently.
  3. Pour filling over the crust and bake for 50-60 minutes until slightly jiggly in the center. Let cool in the oven with the door cracked for about an hour before refrigerating for at least four hours.
  4. For the caramel sauce, melt sugar in a saucepan until amber-colored, then whisk in heavy cream and salt.
  5. Drizzle cooled sauce over cheesecake before serving.
