  • 16 oz cream cheese (softened)
  • ¾ cup granulated sugar
  • 2 tsp vanilla extract
  • 3 large eggs
  • 8 mini Reese’s Peanut Butter Cups (chopped)
  • 1 cup heavy cream (for topping)

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Combine crushed graham crackers and melted butter in a bowl until moistened. Press firmly into the bottom of a greased springform pan.
  3. In another bowl, beat softened cream cheese until smooth. Gradually mix in sugar and vanilla extract until well combined.
  4. Add eggs one at a time, mixing until just incorporated. Gently fold in chopped Reese’s Peanut Butter Cups.
  5. Pour filling over the prepared crust and bake for 50-60 minutes until set but slightly jiggly in the center.
  6. Allow to cool at room temperature before refrigerating for at least four hours or overnight. Top with whipped cream and additional peanut butter cups before serving.
