  • 1 ¾ cups powdered sugar (200g)
  • 3 large egg whites (90g, room temperature)
  • ¼ cup granulated sugar (50g)
  • ½ cup raspberry puree (120g)
  • ½ cup unsalted butter (113g, softened)
  • 1 tsp vanilla extract

Instructions

  1. Preheat oven to 300°F (150°C) and line two baking sheets with parchment paper.
  2. Sift together almond flour and powdered sugar at least twice for smooth shells.
  3. Whip egg whites in a bowl until foamy; gradually add granulated sugar and whip until stiff peaks form.
  4. Gently fold dry mixture into meringue until combined; the batter should flow slowly off the spatula.
