  • 1/2 cup brown sugar
  • 2 tsp ground cinnamon
  • 1/2 tsp ground ginger

  • 1/2 tsp salt
  • 1 (12 oz) can evaporated milk
  • 3 large eggs
  • 1 pre-made pie crust (9-inch)

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Fit the pie crust into a pie dish and crimp the edges.
  3. In a large bowl, whisk together pumpkin puree, granulated sugar, brown sugar, cinnamon, ginger, nutmeg, and salt. Add evaporated milk and eggs; mix until smooth.
  4. Pour the filling into the prepared crust and bake for 15 minutes at high heat.
  5. Reduce temperature to 350°F (175°C) and bake for an additional 30-40 minutes until set.
  6. Allow cooling on a wire rack for at least two hours before serving.
