  • 1 cup pumpkin puree
  • 3/4 cup milk (or non-dairy alternative)
  • 1 tsp vanilla extract

Instructions

  1. In a bowl, whisk together the flour, baking powder, baking soda, brown sugar, salt, cinnamon, and nutmeg.
  2. In another bowl, beat the eggs and mix in the pumpkin puree, milk, and vanilla until well combined.
  3. Pour the wet mixture into the dry ingredients and stir gently until just combined (lumps are okay).
  4. Preheat a nonstick skillet over medium heat and lightly grease it.
  5. Pour about a quarter cup of batter onto the skillet for each pancake. Cook until bubbles form on top (about 2-3 minutes), then flip and cook until golden brown (about another minute).
  6. Serve warm with maple syrup or your favorite toppings.
