  • 2 cups sugar pumpkin (cubed)
  • 4 oz creamy goat cheese (crumbled)
  • 4 cups mixed greens (arugula and spinach)
  • 1/2 cup walnuts (toasted)
  • 2 tbsp balsamic vinegar
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Toss pumpkin cubes with olive oil, salt, and pepper in a bowl. Spread on a baking sheet.
  2. Roast for 25-30 minutes until golden brown and tender, stirring halfway through.
  3. While the pumpkin roasts, rinse and dry mixed greens.
  4. Toast walnuts in a small skillet over medium heat for about 5-7 minutes until fragrant; set aside.
  5. In a large bowl, combine roasted pumpkin with mixed greens, crumbled goat cheese, and toasted walnuts.
  6. Drizzle with balsamic vinegar and olive oil; toss gently before serving.
