  • 1 cup fresh broccoli florets
  • 1 cup halved cherry tomatoes
  • 1 cup cooked chicken breast (diced)
  • ½ cup crumbled feta cheese
  • 3 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • 1 tsp honey
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in salted boiling water according to package instructions until al dente. Drain and set aside.
  2. Steam broccoli florets for about 2-3 minutes until bright green and tender-crisp; then plunge into ice water to stop cooking.
  3. In a bowl, whisk together olive oil, lemon juice, honey, Dijon mustard, salt, and pepper.
  4. In a large mixing bowl, combine the pasta, broccoli, cherry tomatoes, chicken, and feta cheese. Pour the dressing over the top and toss gently until well-coated.
  5. Chill for at least one hour before serving to enhance flavors.
