  • 2 lbs boneless pork shoulder
  • 2 cans (15 oz each) hominy, drained
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 3 tbsp chili powder
  • 2 tsp dried oregano
  • Salt and pepper to taste
  • 1 cup shredded cabbage
  • Lime wedges

Instructions

  1. In a large pot, add the pork shoulder and cover with water. Add half of the chopped onion and whole garlic cloves. Bring to a boil, then reduce heat and simmer for about 2 hours until the pork is fork-tender.
  2. Remove the pork from the pot and shred it with two forks. Return the shredded pork to the pot.
  3. Stir in drained hominy, chili powder, oregano, salt, and pepper. Simmer for an additional 30 minutes.
  4. Add remaining chopped onion for freshness and serve hot in bowls.
  5. Top with shredded cabbage and a squeeze of lime.
