  • 1 cup unsalted roasted pistachios (finely ground)
  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • 2 cups ladyfingers
  • 1 cup strong brewed coffee (cooled)
  • ½ cup granulated sugar
  • 2 tbsp unsweetened cocoa powder (for dusting)

Instructions

  1. Prepare ingredients; brew coffee and let it cool.
  2. In a large bowl, mix mascarpone cheese and sugar until smooth.
  3. Whip heavy cream to stiff peaks and gently fold into the mascarpone mixture.
  4. Quickly dip each ladyfinger in cooled coffee, layering them in a dish.
  5. Spread half of the mascarpone mixture over the ladyfingers, add half of the ground pistachios, and repeat layers.
  6. Cover and chill for at least 4 hours or overnight.
  7. Before serving, dust with cocoa powder and garnish with reserved pistachios.
