  • 4 large eggs
  • 1/2 cup shelled unsalted pistachios (for cream)
  • 1/2 cup granulated sugar (for cream)
  • 1 cup heavy cream (for filling)
  • 1 cup powdered sugar (for glaze)
  • Water (as needed for glaze)

Instructions

  1. Preheat oven to 425°F (220°C). In a saucepan, melt butter with water and a pinch of salt over medium heat. Gradually stir in flour until combined.
  2. Remove from heat, let cool slightly, and mix in eggs one at a time until smooth.
  3. Pipe long strips onto parchment-lined baking sheets. Bake for about 25 minutes until puffed and golden brown.
  4. For the filling, blend pistachios into a paste; whip heavy cream with sugar until soft peaks form, then fold in pistachio paste.
  5. Once cooled, slice eclairs open and fill with pistachio cream. Prepare the glaze by whisking powdered sugar with water until smooth; dip or drizzle over filled eclairs.
