  • 2 cups jasmine rice
  • 1 cup fresh pineapple, chopped
  • 1 large bell pepper (red or yellow), diced
  • 3 green onions, sliced
  • 2 cloves garlic, minced
  • 3 tablespoons low-sodium soy sauce
  • 2 tablespoons sesame oil

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear.
  2. In a pot, combine rinsed rice with 4 cups of water. Bring to a boil, then reduce heat to low and cover. Simmer for about 15 minutes until water is absorbed.
  3. In a skillet, heat sesame oil over medium-high heat. Sauté minced garlic and diced bell pepper for about 5 minutes until soft.
  4. Add chopped pineapple to the skillet; stir for another 3 minutes.
  5. Fluff the cooked rice and add it to the skillet along with soy sauce. Mix until all ingredients are well combined.
  6. Garnish with sliced green onions and serve warm.
