  • 8 oz ribeye steak, thinly sliced
  • 1 cup sliced bell peppers (mixed red and green)
  • 1/2 cup sliced onion
  • 1 cup provolone cheese, shredded
  • 2 tsp olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by slicing the ribeye steak, bell peppers, and onion.
  2. Heat olive oil in a skillet over medium-high heat. Sauté onions until softened (about 2 minutes), then add bell peppers and cook for an additional 3 minutes.
  3. Add the ribeye steak to the skillet along with salt and pepper. Cook until browned (about 5 minutes).
  4. Assemble each quesadilla by placing half of the steak mixture on one side of a tortilla and topping with provolone cheese before folding it over.
  5. Cook each quesadilla in the skillet until golden brown on both sides (about 3 minutes per side). Slice into wedges and serve warm.
