  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 2 large eggs
  • 1 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1 tsp peppermint extract
  • 1 cup semi-sweet chocolate chips
  • 1/4 cup crushed candy canes (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. Melt the unsalted butter and half of the chocolate chips in a saucepan over low heat, stirring until smooth.
  3. Remove from heat and stir in granulated sugar and brown sugar until well combined. Add eggs one at a time, mixing thoroughly.
  4. In a separate bowl, sift together flour and cocoa powder. Gradually fold into the wet mixture until just combined.
  5. Mix in peppermint extract and remaining chocolate chips.
  6. Pour batter into the prepared pan and bake for 25-30 minutes or until a toothpick inserted comes out with moist crumbs. Let cool before cutting and topping with crushed candy canes.
