  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 ripe pears, diced
  • 1 cup crumbled Gorgonzola cheese
  • 2 cups fresh spinach, chopped
  • 2 tbsp olive oil
  • Salt & pepper to taste
  • 2 tbsp balsamic vinegar (for drizzling)

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a baking dish with nonstick spray.
  2. In a bowl, mix diced pears, crumbled Gorgonzola cheese, chopped spinach, salt, and pepper.
  3. Butterfly each chicken breast carefully and spoon the pear mixture inside, folding over gently.
  4. Arrange stuffed chicken in the baking dish. Drizzle generously with olive oil and season with salt and pepper.
  5. Bake for 25–30 minutes until the internal temperature reaches 165°F (75°C). Drizzle with balsamic vinegar before serving.
