  • 1 cup long-grain rice (Basmati or Jasmine)
  • 1 medium onion (diced)
  • 4 cloves garlic (minced)
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp paprika
  • ½ tsp cinnamon
  • 2 cups low-sodium chicken broth
  • ¼ cup toasted pine nuts
  • Fresh parsley or cilantro (for garnish)

Instructions

  1. Sear lamb in olive oil over medium-high heat for 4–5 minutes per side until browned. Remove and set aside.
  2. In the same pot, sauté diced onions and minced garlic for about 3 minutes until translucent.
  3. Stir in cumin, coriander, paprika, and cinnamon; cook for another minute to toast the spices.
  4. Add rice, mixing until coated with spices. Pour in chicken broth and bring to a boil.
  5. Nestle lamb back into the pot, reduce heat to low, cover tightly, and simmer for 20–25 minutes until rice is fluffy and absorbs flavors.
