  • 1 cup quinoa
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 cups fresh spinach
  • 1 medium cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1 medium avocado, sliced
  • 3 tbsp tahini
  • ½ cup Greek yogurt
  • 1 tbsp lemon juice
  • 1 garlic clove, minced

Instructions

  1. Rinse quinoa under cold water. In a saucepan, combine with 2 cups water; bring to boil, then reduce heat and simmer for about 15 minutes until water is absorbed.
  2. Preheat oven to 400°F (200°C). Pat chickpeas dry, toss with olive oil and seasonings, and roast on a baking sheet for 20-25 minutes until crispy.
  3. While quinoa cooks and chickpeas roast, chop spinach, cucumber, cherry tomatoes, and avocado.
  4. In a small bowl, whisk together tahini, Greek yogurt, lemon juice, garlic, and water until smooth.
  5. Assemble the bowl by layering quinoa as the base followed by roasted chickpeas and chopped vegetables. Drizzle with tahini yogurt dressing before serving.
