  • 1 lb large shrimp, peeled and deveined
  • 1 red bell pepper, cut into chunks
  • 1 yellow bell pepper, cut into chunks
  • 1 green bell pepper, cut into chunks
  • 1 medium zucchini, sliced into thick rounds
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • ¼ cup soy sauce
  • 2 tbsp lemon juice

Instructions

  1. In a bowl, whisk together soy sauce, lemon juice, olive oil, garlic powder, salt, and pepper. Marinate steak for at least 30 minutes.
  2. While marinating, prepare the vegetables and shrimp.
  3. Thread steak, shrimp, bell peppers, and zucchini onto skewers alternately.
  4. Preheat grill to medium-high heat (400°F/200°C) and lightly grease.
  5. Grill skewers for about 10-12 minutes, rotating every few minutes until cooked through.
  6. Serve with a squeeze of fresh lemon juice over top.
