  • 200g digestive biscuits
  • 100g unsalted butter, melted
  • 500g cream cheese, at room temperature
  • 200g sour cream
  • 150g granulated sugar (adjust to taste)
  • 2 Earl Grey tea bags
  • 200g fresh mulberries

Instructions

  1. Preheat your oven to 350°F (175°C). Crush the digestive biscuits in a food processor until fine crumbs form. Combine with melted butter and press into the base of a greased springform pan.
  2. In a small saucepan, steep Earl Grey tea bags in half a cup of water over low heat for about five minutes. Allow to cool slightly before removing the bags.
  3. In a large mixing bowl, beat cream cheese until smooth. Gradually add sugar and sour cream, then mix in the cooled tea infusion until well combined.
  4. Gently fold in fresh mulberries and pour the mixture over the biscuit crust.
  5. Bake for 50-60 minutes until the center is slightly jiggly. Turn off the oven and let it cool inside for one hour before refrigerating for at least four hours or overnight.
