  • 1 cup breadcrumbs (fresh or dried)
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 2 large eggs
  • 3 cloves garlic (minced)
  • Salt and pepper to taste
  • 28 oz canned San Marzano tomatoes
  • 2 tbsp extra virgin olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, mix ground beef, breadcrumbs, Parmesan cheese, parsley, eggs, minced garlic, salt, and pepper until just combined.
  3. Shape the mixture into golf ball-sized meatballs and place them on a lined baking sheet.
  4. Bake for 20-25 minutes until browned and cooked through.
  5. In a saucepan, heat olive oil over medium heat. Sauté minced garlic until fragrant. Add canned tomatoes, salt, and pepper; let simmer.
  6. Gently add meatballs to the sauce; simmer together for an additional 5 minutes before serving.
