  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter
  • 1/2 cup water
  • 4 large eggs
  • 1/4 cup unsweetened cocoa powder
  • 2 tsp instant coffee granules
  • 1 cup heavy cream
  • 1/4 cup confectioners' sugar
  • 1/2 cup bittersweet chocolate chips

Instructions

  1. Preheat oven to 425°F (220°C) and line baking sheets with parchment paper.
  2. In a saucepan, combine water and butter; bring to a boil. Stir in flour until the mixture pulls away from the pan.
  3. Remove from heat and cool slightly before adding eggs one at a time until smooth and glossy.
  4. Pipe long strips of dough onto baking sheets, spacing them two inches apart.
  5. Bake for 20–25 minutes until golden brown; do not open the oven during baking.
  6. Whip heavy cream until soft peaks form; fold in confectioners' sugar and instant coffee.
  7. Once cooled, slice éclairs open and fill with mocha cream using a piping bag.
  8. Melt chocolate chips until smooth; dip the tops of filled éclairs into the glaze.
