  • 2 cups low-sodium vegetable broth

Instructions

  1. Rinse the rice under cold water until clear to remove excess starch.
  2. In a blender, combine cilantro, garlic, lime juice, and vegetable broth; blend until smooth.
  3. Heat olive oil in a large saucepan over medium heat. Sauté diced green bell pepper for about 3 minutes until soft.

  5. Reduce heat to low, cover tightly, and simmer for 15-20 minutes or until rice is tender and liquid is absorbed.
