  • 2 cans (15 oz each) canned chickpeas, rinsed and drained
  • 1 cup bell peppers, diced
  • 1 cup cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup hummus (traditional garlic or roasted red pepper)
  • 4 whole wheat tortillas (10-inch size)
  • 2 tbsp olive oil
  • 2 tbsp freshly squeezed lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine the rinsed chickpeas with olive oil and lemon juice. Toss until well-coated.
  2. Add the diced bell peppers, cucumber, cherry tomatoes, and red onion to the bowl. Season with salt and pepper; mix thoroughly.
