  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 tablespoons high-quality matcha powder
  • 1/2 cup unsalted butter (cold, cut into cubes)
  • 1/4 cup cold water
  • 1/3 cup almond paste
  • 1 egg
  • 1 tablespoon water

Instructions

  1. In a large bowl, mix flour, sugar, and matcha powder. Add cold butter and mix until crumbly. Gradually add cold water until combined. Wrap in plastic and refrigerate for at least one hour.
  2. Roll out chilled dough into a rectangle (1/2 inch thick). Fold like a letter and chill for another 30 minutes.
  3. In a bowl, combine almond paste with sugar (and optional vanilla extract).
  4. Roll out the dough again, cut into triangles, and place a tablespoon of filling at the base of each triangle before rolling them up tightly.
  5. Place on a parchment-lined baking sheet and brush with an egg wash made from the beaten egg mixed with water.
  6. Bake in a preheated oven at 375°F (190°C) for 20-25 minutes until golden brown.
