  • 1 cup unsalted butter (cold, cubed)
  • 1/4 cup granulated sugar
  • 2 teaspoons culinary matcha powder
  • 1/2 cup almond flour
  • 1 large egg
  • 1/4 cup cold water

Instructions

  1. In a mixing bowl, combine flour, sugar, and matcha powder. Cut in butter until crumbly. Gradually add cold water to form a dough. Knead gently and chill for 1 hour.
  2. Roll out the dough into a rectangle. Fold into thirds; repeat this process two more times to create layers.
  3. For the filling, mix almond flour, sugar, and egg in a bowl until smooth.
  4. Roll out the layered dough into triangles, placing a spoonful of filling at the base of each triangle. Roll tightly and shape into crescents.
  5. Brush each croissant with an egg wash (beaten egg mixed with water).
  6. Preheat oven to 375°F (190°C). Bake for 20-25 minutes until golden brown.
