  • 4 boneless, skinless chicken breasts (1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 2 medium sweet potatoes, peeled and cubed (1 lb)
  • 3 tbsp Dijon mustard
  • 1/3 cup pure maple syrup
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Spray a baking dish with nonstick cooking spray and season chicken with salt and pepper.
  2. Toss sweet potato cubes in olive oil and salt; spread them on one side of the baking dish.
  3. In a bowl, mix maple syrup, Dijon mustard, soy sauce, minced garlic, and olive oil until well combined.
  4. Place seasoned chicken in the baking dish and drizzle half of the sauce over it, reserving the rest for later.
  5. Roast everything in the oven for 25-30 minutes until chicken reaches an internal temperature of at least 165°F (74°C) and sweet potatoes are fork-tender.
  6. Serve in bowls with the remaining sauce drizzled on top.
