  • 2 ripe mangos (peeled and diced)
  • 1 cup sago pearls
  • 1 can (400ml) full-fat coconut milk
  • ½ cup granulated sugar (adjust to taste)
  • 4 cups water

Instructions

  1. Bring water to a boil in a medium pot. Add sago pearls and cook for 10-15 minutes until translucent, stirring occasionally.
  2. Drain and rinse cooked sago pearls under cold water.
  3. In a bowl, mix coconut milk with sugar until fully dissolved.
  4. Gently fold in the cooked sago and half of the diced mango. Chill in the refrigerator for at least one hour.
  5. Serve chilled, topped with remaining mango pieces and toasted coconut flakes if desired.
